Ingredients

  • Chokecherries - 2 cups, pitted
  • Honey - 2 tablespoons
  • Coconut oil - 2 tablespoons, melted
  • Almond flour - 1 cup
  • Cassava flour - 1/4 cup
  • Baking powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1 large
  • Almond milk - 1/4 cup
  • Vanilla extract - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium bowl, combine the pitted chokecherries and honey, mixing well to coat the cherries evenly.
  3. Transfer the chokecherry mixture to a greased 8-inch baking dish, spreading it out evenly.
  4. In another bowl, whisk together the almond flour, cassava flour, baking powder, cinnamon, and salt.
  5. In a separate bowl, beat the egg and then add the melted coconut oil, almond milk, and vanilla extract, mixing until well combined.
  6. Gradually add the wet ingredients to the dry ingredients, stirring until a thick batter forms.
  7. Drop spoonfuls of the batter over the chokecherry layer, spreading it gently to cover as much fruit as possible.
  8. Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.
  9. Allow the cobbler to cool for a few minutes before serving warm.
