  • Chicken breast - 300 grams
  • Chokecherry juice - 120 ml
  • Honey - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Almond flour - 150 grams
  • Coconut oil - 2 tablespoons
  • Water - 60 ml
  • Fresh basil - for garnish

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. In a bowl, combine chokecherry juice, honey, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and black pepper to create the marinade.
  3. Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. While the chicken is marinating, prepare the almond flour crust by mixing almond flour and coconut oil in a bowl. Gradually add water until a dough forms.
  5. Roll out the dough between two sheets of parchment paper to a thickness of about 1/4 inch. Transfer to a baking sheet.
  6. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 75°C.
  7. Once cooked, shred the grilled chicken using two forks and mix it with any remaining marinade.
