Ingredients

  • Wild rice - 1 cup
  • Water - 2.5 cups
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Collard greens - 2 cups, chopped
  • Spinach - 1 cup, chopped
  • Carrot - 1 medium, grated
  • Vegetable broth - 1 cup
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Fresh parsley - 1/4 cup, chopped

Steps

  1. Rinse the wild rice under cold water and drain.
  2. In a medium pot, combine the wild rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 30 minutes or until the rice is tender and the water is absorbed.
  3. While the rice is cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the diced onion and sauté for about 5 minutes until translucent.
  5. Stir in the minced garlic and cook for another minute until fragrant.
  6. Add the chopped collard greens and grated carrot to the skillet, stirring well to combine. Cook for about 5 minutes until the greens are wilted.
  7. Pour in the vegetable broth and bring to a simmer. Add the chopped spinach and cook for an additional 3-4 minutes until the spinach is wilted.
  8. Season the greens mixture with lemon juice, salt, black pepper, and red pepper flakes (if using). Stir well.
  9. Once the rice is cooked, fluff it with a fork and then gently fold it into the greens mixture. Combine thoroughly.
  10. Serve hot, garnished with fresh parsley.
