- Flattened rice (poha) - 100 grams
- Peanuts - 30 grams
- Cashew nuts - 20 grams
- Green chilies - 2, finely chopped
- Curry leaves - 10 leaves
- Turmeric powder - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Coriander leaves - for garnish
Steps
- Heat oil in a pan over medium heat and add mustard seeds. Once they start to splutter, add peanuts and cashew nuts, frying until golden brown.
- Add the chopped green chilies and curry leaves to the pan, stirring for a minute until fragrant.
- Mix in the turmeric powder and salt, followed by the flattened rice. Stir gently to coat the rice with the spices and nuts, cooking for about 5 minutes.
- Remove from heat, drizzle lemon juice on top, and mix well. Garnish with chopped coriander leaves before serving.
