Ingredients

  • Flattened rice (poha) - 100 grams
  • Peanuts - 30 grams
  • Cashew nuts - 20 grams
  • Green chilies - 2, finely chopped
  • Curry leaves - 10 leaves
  • Turmeric powder - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Coriander leaves - for garnish

Steps

  1. Heat oil in a pan over medium heat and add mustard seeds. Once they start to splutter, add peanuts and cashew nuts, frying until golden brown.
  2. Add the chopped green chilies and curry leaves to the pan, stirring for a minute until fragrant.
  3. Mix in the turmeric powder and salt, followed by the flattened rice. Stir gently to coat the rice with the spices and nuts, cooking for about 5 minutes.
  4. Remove from heat, drizzle lemon juice on top, and mix well. Garnish with chopped coriander leaves before serving.
