- Cooked rice - 1 cup
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Green chilies - 2, slit
- Curry leaves - 10 leaves
- Peanuts - 2 tablespoons
- Grated coconut - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Salt - to taste
- Oil - 2 tablespoons (preferably coconut or vegetable oil)
Steps
- Heat oil in a pan over medium heat and add mustard seeds. Once they start to splutter, add cumin seeds and let them cook for a few seconds.
- Add the slit green chilies, curry leaves, and peanuts to the pan. Sauté for about 2-3 minutes until the peanuts are slightly roasted.
- Stir in the turmeric powder and salt, cooking for another minute to combine the flavors.
- Add the cooked rice to the pan and gently mix everything together, ensuring the rice is well-coated with the spices.
- Remove from heat and add the grated coconut, fresh coriander leaves, and lemon juice. Mix well to combine all ingredients.
- Serve hot, garnished with additional coriander or lemon wedges if desired.
