Ingredients

  • Cooked rice - 1 cup
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chilies - 2, slit
  • Curry leaves - 10 leaves
  • Peanuts - 2 tablespoons
  • Grated coconut - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Salt - to taste
  • Oil - 2 tablespoons (preferably coconut or vegetable oil)

Steps

  1. Heat oil in a pan over medium heat and add mustard seeds. Once they start to splutter, add cumin seeds and let them cook for a few seconds.
  2. Add the slit green chilies, curry leaves, and peanuts to the pan. Sauté for about 2-3 minutes until the peanuts are slightly roasted.
  3. Stir in the turmeric powder and salt, cooking for another minute to combine the flavors.
  4. Add the cooked rice to the pan and gently mix everything together, ensuring the rice is well-coated with the spices.
  5. Remove from heat and add the grated coconut, fresh coriander leaves, and lemon juice. Mix well to combine all ingredients.
  6. Serve hot, garnished with additional coriander or lemon wedges if desired.
