Ingredients

  • Shrimp (cleaned and deveined) - 250 grams
  • Coconut milk - 200 ml

  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Green chilies (slit) - 2
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Mustard oil - 2 tablespoons
  • Coriander leaves (for garnish) - a handful

Steps

  1. Heat the mustard oil in a pan over medium heat until it reaches smoking point, then reduce the heat.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the ginger paste and garlic paste, cooking for another 2 minutes until fragrant.
  4. Add the turmeric powder, red chili powder, and salt, mixing well.
  5. Introduce the cleaned shrimp and green chilies to the pan, cooking for about 3-4 minutes until the shrimp turn pink.
  6. Pour in the coconut milk, bringing it to a gentle simmer, and cook for 5-7 minutes until the sauce thickens slightly.
  7. Sprinkle garam masala over the curry and stir well, allowing it to cook for another 2 minutes.
  8. Garnish with fresh coriander leaves before serving.
