Chikki
Chikki is a traditional Indian dessert made with roasted nuts and jaggery, creating a delightful and crunchy treat. This vegan version retains all the authentic flavors while being completely plant-based.

Ingredients
- Peanuts - 100 grams
- Jaggery - 75 grams
- Water - 2 tablespoons
- Cardamom powder - 1/4 teaspoon
- Coconut oil - 1 teaspoon
Steps
- Roast the peanuts in a dry pan over medium heat until they are golden brown and aromatic, about 5-7 minutes. Stir frequently to prevent burning.
- Remove the skins from the peanuts by rubbing them together in your hands. Set aside.
- In a saucepan, combine jaggery and water. Heat over low-medium heat, stirring until the jaggery dissolves completely.
- Continue to cook the jaggery mixture until it reaches a soft ball stage (approximately 115°C or 240°F). You can check this by dropping a small amount in cold water and forming a soft ball.
- Once at the correct temperature, remove from heat and quickly stir in the roasted peanuts and cardamom powder until well combined.
- Grease a flat surface or a tray with coconut oil, then pour the mixture onto it. Use a spatula to spread it out evenly.
- Allow the chikki to cool for about 10 minutes, then cut into desired shapes while still warm.
