  • Garlic - 2 cloves (minced)
  • Ginger - 1 inch piece (grated)
  • Coconut milk - 200 ml
  • Spinach - 100 grams (fresh, chopped)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons (cooking oil of choice)
  • Fresh cilantro - for garnish

Steps

  1. Heat the oil in a medium pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the chopped tomato and cook until it softens, about 3-4 minutes.
  5. Mix in the coriander powder, turmeric powder, red chili powder, and salt, cooking for another minute.
  6. Add the drained chickpeas and stir to coat them in the spices, cooking for 2-3 minutes.
  7. Pour in the coconut milk and bring the mixture to a gentle simmer. Let it cook for 10 minutes, allowing the flavors to meld.
  8. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
  9. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
