- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon

- Oil - 2 tablespoons (cooking oil of choice)
- Fresh cilantro - for garnish
Steps
- Heat the oil in a medium pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the chopped tomato and cook until it softens, about 3-4 minutes.
- Mix in the coriander powder, turmeric powder, red chili powder, and salt, cooking for another minute.
- Add the drained chickpeas and stir to coat them in the spices, cooking for 2-3 minutes.
- Pour in the coconut milk and bring the mixture to a gentle simmer. Let it cook for 10 minutes, allowing the flavors to meld.
- Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
