Ingredients
- Chickpeas - 200 grams, soaked overnight
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Spinach - 50 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
Steps
- Heat olive oil in a pot over medium heat. Add cumin seeds and let them sizzle for about 30 seconds.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the diced tomato, turmeric, coriander powder, and salt. Cook until the tomatoes soften, about 3-4 minutes.
- Add the soaked chickpeas and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes until the chickpeas are tender.
- Stir in the coconut milk and chopped spinach, cooking for another 5 minutes until the spinach is wilted.
- Add garam masala, black pepper, and lemon juice. Adjust seasoning as necessary.
- Serve hot, garnished with fresh cilantro.
