Ingredients

  • Chickpeas - 200 grams, soaked overnight
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Spinach - 50 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon

Steps

  1. Heat olive oil in a pot over medium heat. Add cumin seeds and let them sizzle for about 30 seconds.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the diced tomato, turmeric, coriander powder, and salt. Cook until the tomatoes soften, about 3-4 minutes.
  5. Add the soaked chickpeas and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes until the chickpeas are tender.
  6. Stir in the coconut milk and chopped spinach, cooking for another 5 minutes until the spinach is wilted.
  7. Add garam masala, black pepper, and lemon juice. Adjust seasoning as necessary.
  8. Serve hot, garnished with fresh cilantro.
