Ingredients
- Chickpea flour (besan) - 100 grams
- Jaggery (grated) - 50 grams
- Coconut milk - 200 ml
- Cardamom powder - 1/2 teaspoon
- Ghee - 1 tablespoon
- Chopped almonds - 2 tablespoons
- Chopped pistachios - 1 tablespoon
- Water - 100 ml
Steps
- In a frying pan, heat 1 tablespoon of ghee over medium heat.
- Add 100 grams of chickpea flour and roast it for about 5-7 minutes, stirring continuously until it turns golden brown and emits a nutty aroma.
- In a separate saucepan, combine 200 ml of coconut milk, 100 ml of water, and 50 grams of grated jaggery. Heat over low heat until the jaggery dissolves completely.
- Once the jaggery is dissolved, add the roasted chickpea flour to the coconut milk mixture, stirring continuously to avoid lumps.
- Add 1/2 teaspoon of cardamom powder and continue to cook on low heat for another 10-15 minutes until the mixture thickens to a pudding-like consistency.
- Remove from heat and pour the pudding into serving bowls.
- Garnish with chopped almonds and pistachios before serving.
