Ingredients

  • Chickpea flour (besan) - 100 grams
  • Jaggery (grated) - 50 grams
  • Coconut milk - 200 ml
  • Cardamom powder - 1/2 teaspoon
  • Ghee - 1 tablespoon
  • Chopped almonds - 2 tablespoons
  • Chopped pistachios - 1 tablespoon
  • Water - 100 ml

Steps

  1. In a frying pan, heat 1 tablespoon of ghee over medium heat.
  2. Add 100 grams of chickpea flour and roast it for about 5-7 minutes, stirring continuously until it turns golden brown and emits a nutty aroma.
  3. In a separate saucepan, combine 200 ml of coconut milk, 100 ml of water, and 50 grams of grated jaggery. Heat over low heat until the jaggery dissolves completely.
  4. Once the jaggery is dissolved, add the roasted chickpea flour to the coconut milk mixture, stirring continuously to avoid lumps.
  5. Add 1/2 teaspoon of cardamom powder and continue to cook on low heat for another 10-15 minutes until the mixture thickens to a pudding-like consistency.
  6. Remove from heat and pour the pudding into serving bowls.
  7. Garnish with chopped almonds and pistachios before serving.
