Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Fresh cilantro - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Rice flour - 2 tablespoons
  • Olive oil - 1 tablespoon for brushing
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.
  2. Add the chopped red onion, minced garlic, grated ginger, chopped cilantro, cumin powder, coriander powder, garam masala, chili powder, salt, black pepper, lemon juice, and rice flour to the bowl.
  3. Mix all the ingredients well until combined. If the mixture is too wet, add a little more rice flour until it holds together.
  4. Divide the mixture into 4 equal portions and shape each portion into a kebab around a skewer.
  5. Preheat the grill or barbecue to medium-high heat.
  6. Brush the kebabs with olive oil on all sides.
  7. Grill the kebabs for about 10-12 minutes, turning occasionally, until they are golden brown and crispy on the outside.
  8. Remove from the grill and let them cool for a minute before serving.
