Chickpea Kebabs

Ingredients
- Canned chickpeas - 400 grams, drained and rinsed
- Red onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Fresh cilantro - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Rice flour - 2 tablespoons
- Olive oil - 1 tablespoon for brushing
- Skewers - 4 (soaked in water if wooden)
Steps
- In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.
- Add the chopped red onion, minced garlic, grated ginger, chopped cilantro, cumin powder, coriander powder, garam masala, chili powder, salt, black pepper, lemon juice, and rice flour to the bowl.
- Mix all the ingredients well until combined. If the mixture is too wet, add a little more rice flour until it holds together.
- Divide the mixture into 4 equal portions and shape each portion into a kebab around a skewer.
- Preheat the grill or barbecue to medium-high heat.
- Brush the kebabs with olive oil on all sides.
- Grill the kebabs for about 10-12 minutes, turning occasionally, until they are golden brown and crispy on the outside.
- Remove from the grill and let them cool for a minute before serving.
