- Water - 100 ml

- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh coriander - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Vegetables of choice (bell peppers, spinach, zucchini) - 150 grams, chopped
Steps
- In a mixing bowl, combine chickpea flour, turmeric powder, cumin powder, salt, and black pepper.
- Gradually add water while stirring until a smooth, thick batter forms.
- Heat a non-stick frying pan over medium heat and add olive oil.
- Pour a ladleful of the batter into the pan, spreading it into a thin circle to form a pasta sheet.
- Cook for about 2-3 minutes until the edges lift, then flip and cook for another 2-3 minutes until lightly browned.
- Repeat the process with the remaining batter to make more pasta sheets.
- In the same pan, add a little more olive oil and sauté minced garlic and chopped vegetables until tender.
- Cut the cooked pasta sheets into strips and toss them with the sautéed vegetables.
- Garnish with fresh coriander and serve immediately.
