Ingredients

  • Chickpea flour - 100 grams
  • Water - 100 ml
  • Olive oil - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh coriander - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Vegetables of choice (bell peppers, spinach, zucchini) - 150 grams, chopped

Steps

  1. In a mixing bowl, combine chickpea flour, turmeric powder, cumin powder, salt, and black pepper.
  2. Gradually add water while stirring until a smooth, thick batter forms.
  3. Heat a non-stick frying pan over medium heat and add olive oil.
  4. Pour a ladleful of the batter into the pan, spreading it into a thin circle to form a pasta sheet.
  5. Cook for about 2-3 minutes until the edges lift, then flip and cook for another 2-3 minutes until lightly browned.
  6. Repeat the process with the remaining batter to make more pasta sheets.
  7. In the same pan, add a little more olive oil and sauté minced garlic and chopped vegetables until tender.
  8. Cut the cooked pasta sheets into strips and toss them with the sautéed vegetables.
  9. Garnish with fresh coriander and serve immediately.
