- Chickpeas (canned) - 400 g
- Basmati rice - 150 g
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Tomato puree - 200 g
- Coconut milk - 200 ml
- Cumin seeds - 1 tsp
- Coriander powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Garam masala - 1 tsp
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish, chopped
- Vegetable oil - 2 tbsp
- Water - 300 ml
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, heat 2 tablespoons of vegetable oil over medium heat. Add cumin seeds and sauté until they start to sizzle.
- Add the chopped onion to the pot and cook until soft and translucent, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the tomato puree, coriander powder, turmeric powder, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk and add the drained chickpeas. Stir to combine and let it simmer for 10 minutes, allowing the flavors to meld.
- While the curry simmers, bring 300 ml of water to a boil in a separate pot. Add the soaked basmati rice, cover, and reduce heat to low. Cook for 15 minutes or until the rice is tender and the water is absorbed.
- Once the curry is ready, stir in the garam masala and adjust seasoning if needed.
- Serve the chickpea curry over a bed of basmati rice, garnished with chopped cilantro.
