  • Curry powder - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Onion - 1 small, finely chopped
  • Tomato - 1 medium, diced
  • Spinach - 1 cup (30g), fresh
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a medium skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add minced garlic and grated ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.
  4. Stir in the curry powder and turmeric, cooking for 30 seconds to release the spices' aroma.
  5. Add the drained chickpeas and diced tomato to the skillet, mixing well to combine with the spices.
  6. Pour in the coconut milk, reduce the heat to low, and simmer for about 5 minutes until the mixture thickens slightly. Season with salt and pepper to taste.
  7. Fold in the fresh spinach and cook for another 1-2 minutes until wilted. Remove from heat.
  8. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  9. Transfer the rolled dough onto a baking sheet or pizza stone.
  10. Spread the chickpea curry mixture evenly over the pizza dough, leaving a small border around the edges.
  11. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and cooked through.
