Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped (optional)
  • Cilantro (fresh coriander) - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1/2 teaspoon (or to taste)
  • Black pepper - 1/4 teaspoon
  • Bread crumbs - 1/2 cup
  • Egg - 1 large (or flax egg for vegan option)
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2, whole wheat or your choice
  • Lettuce leaves - 2, for serving
  • Tomato - 1, sliced, for serving
  • Cucumber - 1/2, sliced, for serving
  • Yogurt or vegan mayo - for serving

Steps

  1. In a mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the chopped onion, garlic, ginger, green chili, cilantro, cumin powder, coriander powder, garam masala, salt, and black pepper to the mashed chickpeas.
  3. Mix in the bread crumbs and the egg (or flax egg) until well combined. If the mixture is too wet, add more bread crumbs to achieve a moldable consistency.
  4. Divide the mixture into two equal portions and shape each portion into a patty.
  5. Heat olive oil in a frying pan over medium heat. Once hot, carefully place the patties in the pan and cook for about 5-7 minutes on each side, until golden brown and crispy.
  6. While the patties are cooking, toast the burger buns lightly if desired.
  7. Assemble the burgers by placing a patty on each bun, and top with lettuce, tomato slices, cucumber slices, and a dollop of yogurt or vegan mayo.
  8. Serve warm and enjoy your delicious high-protein chickpea burger!
