Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, diced
  • Bell pepper (any color) - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Cilantro (fresh) - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Bread crumbs - 1/2 cup
  • Grated cheese (optional) - 1/4 cup

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onion, garlic, and ginger. Sauté until the onions turn translucent.
  4. Stir in the diced tomato and bell pepper, cooking until softened.
  5. Add the drained chickpeas, turmeric, garam masala, salt, and black pepper. Mix well and cook for another 5 minutes.
  6. Remove from heat and stir in chopped cilantro.
  7. Transfer the chickpea mixture to a baking dish, spreading it evenly.
  8. Sprinkle bread crumbs on top for a crunchy texture, and add grated cheese if using.
  9. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  10. Remove from the oven and let it cool slightly before serving.
