Ingredients

  • Chicken thighs - 300 grams, boneless and skinless, cut into bite-sized pieces
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch piece, minced
  • Tomato - 1 medium, chopped
  • Coconut oil - 2 tablespoons
  • Vinegar - 2 tablespoons (preferably white or apple cider)
  • Brown sugar - 1 teaspoon
  • Red chili powder - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat coconut oil in a large pan over medium heat and add mustard seeds. Once they start to crackle, add the chopped onion and sauté until golden brown.
  2. Add minced garlic and ginger to the pan, cooking for an additional 2 minutes until fragrant.
  3. Stir in the chopped tomato, red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Cook until the tomatoes break down and the oil starts to separate from the mixture.
  4. Add the chicken pieces to the pan, stirring well to coat them in the spice mixture. Cook for about 5 minutes until the chicken is no longer pink.
  5. Pour in the vinegar and add brown sugar, mixing well. Cover the pan and let it simmer for 15-20 minutes on low heat until the chicken is cooked through and tender.
  6. Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
