Ingredients

  • Boneless chicken thighs - 400 grams
  • Yogurt - 150 grams
  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Red chili powder - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Cut the chicken thighs into bite-sized pieces and set aside.
  2. In a mixing bowl, combine yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, lemon juice, and salt to create the marinade.
  3. Add the chicken pieces to the marinade, ensuring they are well-coated. Cover the bowl and refrigerate for at least 30 minutes (or up to overnight for better flavor).
  4. Preheat the grill or oven to 200°C (400°F). If using skewers, soak them in water for 30 minutes to prevent burning.
  5. Thread the marinated chicken pieces onto skewers (if using) and brush with oil.
  6. Place the skewers on the grill or on a baking tray if using the oven. Cook for 15-20 minutes, turning occasionally, until the chicken is cooked through and has a slight char.
  7. Remove from heat and let it rest for a few minutes before serving.
  8. Garnish with fresh coriander leaves and serve with naan or rice and your choice of chutney.
