Ingredients

  • Ground chicken - 500 grams
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies - 2, finely chopped
  • Cilantro (fresh coriander) - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Oil - 1 tablespoon (for binding)
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a large bowl, combine the ground chicken, chopped onion, ginger-garlic paste, green chilies, cilantro, mint leaves, garam masala, cumin powder, coriander powder, red chili powder, salt, black pepper, lemon juice, and oil.
  2. Mix the ingredients thoroughly until well combined. You can use your hands for better mixing, ensuring the spices are evenly distributed.
  3. Cover the mixture and let it marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
  4. Preheat your grill or pan over medium-high heat. If using a grill, lightly oil the grates.
  5. Take a portion of the marinated chicken mixture and mold it around the skewer, shaping it into a long, cylindrical kebab. Repeat with the remaining mixture.
  6. Place the skewers on the grill or in the pan. Cook for about 10-12 minutes, turning occasionally, until the kebabs are cooked through and have nice grill marks.
  7. Once cooked, remove the kebabs from the grill and let them rest for a few minutes before serving.
  8. Serve hot with mint chutney, onion rings, and lemon wedges.
