Ingredients

  • Chicken breast - 300 grams, cubed
  • Fresh spinach - 200 grams, washed and chopped
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, grated
  • Green chili - 1, slit (optional)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Cooking oil - 2 tablespoons
  • Water - 150 ml
  • Lemon juice - 1 tablespoon
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and green chili. Cook for 1-2 minutes until fragrant.
  4. Add the cubed chicken and cook until no longer pink, about 5-7 minutes.
  5. Stir in the pureed tomato, coriander powder, turmeric powder, and salt. Cook for another 5 minutes until the oil separates from the mixture.
  6. Add the chopped spinach and water. Mix well and cover the pan. Cook for 10 minutes until the spinach is wilted and the chicken is fully cooked.
  7. Stir in the garam masala and lemon juice. Cook for an additional 2 minutes.
  8. Garnish with fresh coriander leaves before serving.
