- Chicken breast - 300 grams, cubed
- Fresh spinach - 200 grams, washed and chopped
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, slit (optional)
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Cooking oil - 2 tablespoons
- Water - 150 ml
- Lemon juice - 1 tablespoon
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Stir in the minced garlic, grated ginger, and green chili. Cook for 1-2 minutes until fragrant.
- Add the cubed chicken and cook until no longer pink, about 5-7 minutes.
- Stir in the pureed tomato, coriander powder, turmeric powder, and salt. Cook for another 5 minutes until the oil separates from the mixture.
- Add the chopped spinach and water. Mix well and cover the pan. Cook for 10 minutes until the spinach is wilted and the chicken is fully cooked.
- Stir in the garam masala and lemon juice. Cook for an additional 2 minutes.
- Garnish with fresh coriander leaves before serving.
