Ingredients

  • Basmati rice - 1 cup
  • Chicken, boneless and skinless - 250 grams
  • Onion, thinly sliced - 1 medium
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Green chili, slit - 1
  • Garam masala - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Water - 2 cups
  • Vegetable oil or ghee - 2 tablespoons
  • Cilantro, chopped - 2 tablespoons (for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
  2. In a large pot, heat the vegetable oil or ghee over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the sliced onions and sauté until golden brown, about 5-7 minutes.
  4. Stir in the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
  5. Add the chicken pieces to the pot and cook until they are no longer pink, about 5-6 minutes.
  6. Sprinkle in the turmeric powder, garam masala, and salt. Mix well and cook for another 2 minutes.
  7. Add the soaked and drained rice to the pot, gently stirring to combine with the chicken and spices.
  8. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
  9. After 15 minutes, turn off the heat and let the pot sit covered for another 5 minutes to allow the rice to finish cooking.
  10. Fluff the rice with a fork, drizzle with lemon juice, and garnish with chopped cilantro before serving.
