- Basmati rice - 1 cup
- Chicken, boneless and skinless - 250 grams
- Onion, thinly sliced - 1 medium
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Green chili, slit - 1
- Garam masala - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Water - 2 cups
- Vegetable oil or ghee - 2 tablespoons
- Cilantro, chopped - 2 tablespoons (for garnish)
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
- In a large pot, heat the vegetable oil or ghee over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the sliced onions and sauté until golden brown, about 5-7 minutes.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
- Add the chicken pieces to the pot and cook until they are no longer pink, about 5-6 minutes.
- Sprinkle in the turmeric powder, garam masala, and salt. Mix well and cook for another 2 minutes.
- Add the soaked and drained rice to the pot, gently stirring to combine with the chicken and spices.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- After 15 minutes, turn off the heat and let the pot sit covered for another 5 minutes to allow the rice to finish cooking.
- Fluff the rice with a fork, drizzle with lemon juice, and garnish with chopped cilantro before serving.
