- Chicken breast - 200 grams, diced
- Red lentils - 100 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Coconut milk - 200 ml
- Chicken broth - 500 ml
- Curry powder - 1 tablespoon
- Turmeric - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
- Add the diced chicken breast to the pot and cook until browned on all sides.
- Stir in the diced carrot and celery, and cook for another 5 minutes.
- Add the red lentils, curry powder, turmeric, cumin, salt, and pepper. Stir well to combine.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes, or until the lentils are tender.
- Stir in the coconut milk and heat through, cooking for an additional 5 minutes.
- Taste and adjust seasoning as needed. Serve hot, garnished with fresh cilantro.
