Ingredients

  • Chicken breast - 200 grams, diced
  • Red lentils - 100 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Coconut milk - 200 ml
  • Chicken broth - 500 ml
  • Curry powder - 1 tablespoon
  • Turmeric - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  2. Add the diced chicken breast to the pot and cook until browned on all sides.
  3. Stir in the diced carrot and celery, and cook for another 5 minutes.
  4. Add the red lentils, curry powder, turmeric, cumin, salt, and pepper. Stir well to combine.
  5. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes, or until the lentils are tender.
  6. Stir in the coconut milk and heat through, cooking for an additional 5 minutes.
  7. Taste and adjust seasoning as needed. Serve hot, garnished with fresh cilantro.
