Ingredients

  • Chicken thighs - 300 grams, boneless and skinless, cut into bite-sized pieces
  • Onion - 1 medium, finely sliced
  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Yogurt - 100 grams, plain and unsweetened
  • Coconut milk - 100 ml
  • Ground almonds - 2 tablespoons
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - ½ teaspoon
  • Red chili powder - 1 teaspoon (adjust to taste)
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the cooking oil in a large pan over medium heat. Add the sliced onions and sauté until they turn golden brown.
  2. Add the ginger and garlic paste to the onions and cook for another 2 minutes until fragrant.
  3. Stir in the chicken pieces and cook until they are no longer pink, about 5-7 minutes.
  4. In a bowl, mix the yogurt, coconut milk, ground almonds, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, and salt until well combined.
  5. Pour the yogurt mixture over the chicken and stir well to coat. Bring to a gentle simmer.
  6. Cover the pan and let it cook on low heat for 20 minutes, stirring occasionally, until the chicken is tender and the sauce has thickened.
  7. Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
