- Chicken thighs - 300 grams, boneless and skinless, cut into bite-sized pieces

- Ginger paste - 1 tablespoon
- Garlic paste - 1 tablespoon
- Yogurt - 100 grams, plain and unsweetened
- Coconut milk - 100 ml
- Ground almonds - 2 tablespoons
- Garam masala - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - ½ teaspoon
- Red chili powder - 1 teaspoon (adjust to taste)
- Cooking oil - 2 tablespoons
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Heat the cooking oil in a large pan over medium heat. Add the sliced onions and sauté until they turn golden brown.
- Add the ginger and garlic paste to the onions and cook for another 2 minutes until fragrant.
- Stir in the chicken pieces and cook until they are no longer pink, about 5-7 minutes.
- In a bowl, mix the yogurt, coconut milk, ground almonds, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, and salt until well combined.
- Pour the yogurt mixture over the chicken and stir well to coat. Bring to a gentle simmer.
- Cover the pan and let it cook on low heat for 20 minutes, stirring occasionally, until the chicken is tender and the sauce has thickened.
- Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
