- Chicken thighs - 300 grams, boneless and skinless, cut into bite-sized pieces
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Tomato - 1 medium, pureed
- Coconut milk - 200 ml
- Vegetable oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Red chili powder - 1/2 teaspoon (adjust to taste)
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Heat vegetable oil in a large pan over medium heat. Add cumin seeds and sauté until they begin to splutter.
- Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
- Add the pureed tomato and cook for 5-6 minutes until the oil starts to separate from the mixture.
- Mix in coriander powder, turmeric powder, garam masala, red chili powder, and salt. Cook for another 2 minutes to toast the spices.
- Add the chicken pieces to the pan, stirring to coat them with the spice mixture. Cook for 5-7 minutes until the chicken is no longer pink.
- Pour in the coconut milk, stir well, and bring the mixture to a simmer. Reduce the heat and cover the pan, letting it cook for 15 minutes until the chicken is tender.
- Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
