- Chicken thighs - 400 grams, boneless and skinless
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 inch piece, grated
- Tomato - 1 medium, chopped
- Green chili - 1, slit
- Curry leaves - 10 leaves
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat coconut oil in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and slit green chili to the pan. Sauté for another 2-3 minutes until fragrant.
- Stir in the chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes to allow the spices to blend.
- Add the chicken thighs to the pan, stirring to coat the chicken in the spice mixture. Cook for about 5 minutes until the chicken starts to brown.
- Pour in 1/4 cup of water and add the curry leaves. Cover the pan and let it simmer for 20 minutes on low heat, or until the chicken is cooked through.
- Once the chicken is cooked, sprinkle garam masala over the top and mix well. Cook uncovered for an additional 2-3 minutes.
- Garnish with fresh coriander leaves before serving.
