Ingredients
- Basmati rice - 200 grams
- Chicken breast, boneless - 300 grams
- Onion, thinly sliced - 1 medium
- Tomato, chopped - 1 medium
- Plain yogurt - 100 grams
- Ginger-garlic paste - 1 tablespoon
- Biryani masala - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cilantro, chopped - 2 tablespoons
- Mint leaves, chopped - 2 tablespoons
- Cooking oil or ghee - 3 tablespoons
- Salt - to taste
- Water - 500 milliliters
- Whole spices (bay leaf, cloves, cardamom, cinnamon) - 1 each
Steps
- Wash the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a bowl, marinate the chicken with yogurt, ginger-garlic paste, biryani masala, turmeric powder, red chili powder, and salt. Let it marinate for at least 20 minutes.
- In a large pot, heat oil or ghee over medium heat. Add the whole spices and sauté for a minute until fragrant.
- Add the sliced onions and cook until they are golden brown. Then add the chopped tomatoes and cook until soft.
- Add the marinated chicken to the pot and cook until the chicken is browned and cooked through, about 8-10 minutes.
- Add chopped cilantro and mint leaves to the chicken mixture, stirring well.
- In a separate pot, bring 500 ml of water to a boil. Add the soaked basmati rice to the boiling water and cook until the rice is 70% cooked, about 5-6 minutes. Drain the rice.
- Layer the partially cooked rice over the chicken in the pot. Cover the pot with a tight-fitting lid and cook on low heat for about 15-20 minutes until the rice is fully cooked and has absorbed all the flavors.
- Once done, fluff the biryani gently with a fork, serve hot with raita (yogurt sauce) or salad.
