Ingredients

  • Basmati rice - 200 grams
  • Chicken breast, boneless - 300 grams
  • Onion, thinly sliced - 1 medium
  • Tomato, chopped - 1 medium
  • Plain yogurt - 100 grams
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Mint leaves, chopped - 2 tablespoons
  • Cooking oil or ghee - 3 tablespoons
  • Salt - to taste
  • Water - 500 milliliters
  • Whole spices (bay leaf, cloves, cardamom, cinnamon) - 1 each

Steps

  1. Wash the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a bowl, marinate the chicken with yogurt, ginger-garlic paste, biryani masala, turmeric powder, red chili powder, and salt. Let it marinate for at least 20 minutes.
  3. In a large pot, heat oil or ghee over medium heat. Add the whole spices and sauté for a minute until fragrant.
  4. Add the sliced onions and cook until they are golden brown. Then add the chopped tomatoes and cook until soft.
  5. Add the marinated chicken to the pot and cook until the chicken is browned and cooked through, about 8-10 minutes.
  6. Add chopped cilantro and mint leaves to the chicken mixture, stirring well.
  7. In a separate pot, bring 500 ml of water to a boil. Add the soaked basmati rice to the boiling water and cook until the rice is 70% cooked, about 5-6 minutes. Drain the rice.
  8. Layer the partially cooked rice over the chicken in the pot. Cover the pot with a tight-fitting lid and cook on low heat for about 15-20 minutes until the rice is fully cooked and has absorbed all the flavors.
  9. Once done, fluff the biryani gently with a fork, serve hot with raita (yogurt sauce) or salad.
