Ingredients

  • Sweet potatoes - 250 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 200 ml

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes, then toss them in a bowl with 1/2 tablespoon of olive oil, salt, and pepper.
  3. Spread the sweet potato cubes on a baking sheet and roast in the oven for 20-25 minutes, or until tender and slightly caramelized.
  4. While the sweet potatoes are roasting, prepare the pasta dough by mixing the almond flour and salt in a bowl.
  5. In a separate bowl, whisk the egg and add it to the almond flour mixture, stirring until it forms a dough.
  6. Knead the dough for a minute until smooth, then roll it out between two sheets of parchment paper to a thickness of about 2-3 mm.
  7. Cut the rolled dough into your desired pasta shape (e.g., fettuccine or tagliatelle).
  8. Bring a pot of salted water to a boil and cook the pasta for about 3-4 minutes until al dente. Drain and set aside.
  9. In a skillet, heat the remaining olive oil over medium heat, add the minced garlic, and sauté for about 1 minute until fragrant.
  10. Add the roasted sweet potatoes and vegetable broth to the skillet, stirring gently to combine and heat through.
  11. Add the cooked pasta to the skillet, tossing everything together to coat with the sauce.
  12. Garnish with fresh parsley before serving.
