Ingredients

  • Chia seeds - 1/4 cup
  • Coconut milk - 1 cup
  • Almond milk - 1/2 cup
  • Jaggery (grated) - 2 tablespoons
  • Cardamom powder - 1/4 teaspoon
  • Chopped nuts (almonds, cashews) - 2 tablespoons
  • Raisins - 1 tablespoon
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. In a bowl, combine chia seeds and coconut milk. Stir well and let it sit for 15 minutes to allow the chia seeds to swell.
  2. In a saucepan, heat the almond milk over medium heat. Add grated jaggery and stir until it completely dissolves.
  3. Once the jaggery is dissolved, add the soaked chia seed mixture to the saucepan.
  4. Add cardamom powder, vanilla extract, and a pinch of salt. Mix well and cook for another 5-7 minutes, stirring occasionally.
  5. Remove from heat and let it cool slightly. The kheer will thicken as it cools.
  6. Serve in bowls, garnished with chopped nuts and raisins.
