- Chia seeds - 1/4 cup
- Coconut milk - 1 cup
- Almond milk - 1/2 cup
- Jaggery (grated) - 2 tablespoons
- Cardamom powder - 1/4 teaspoon
- Chopped nuts (almonds, cashews) - 2 tablespoons
- Raisins - 1 tablespoon
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
Steps
- In a bowl, combine chia seeds and coconut milk. Stir well and let it sit for 15 minutes to allow the chia seeds to swell.
- In a saucepan, heat the almond milk over medium heat. Add grated jaggery and stir until it completely dissolves.
- Once the jaggery is dissolved, add the soaked chia seed mixture to the saucepan.
- Add cardamom powder, vanilla extract, and a pinch of salt. Mix well and cook for another 5-7 minutes, stirring occasionally.
- Remove from heat and let it cool slightly. The kheer will thicken as it cools.
- Serve in bowls, garnished with chopped nuts and raisins.
