- Chhena - 200 grams
- Sugar - 100 grams
- Water - 1 cup
- Cardamom powder - 1/2 teaspoon
- Ghee - 2 teaspoons
- Chopped nuts (cashews and almonds) - 2 tablespoons
- Saffron strands - a pinch
Steps
- Begin by preparing the chhena: Boil milk and curdle it using lemon juice or vinegar, then strain the curds through a muslin cloth and rinse with cold water to remove acidity.
- Once drained, knead the chhena for about 5 minutes until smooth and soft.
- In a saucepan, combine sugar and water, and heat until the sugar dissolves completely to create a sugar syrup.
- Add cardamom powder and saffron strands to the syrup and stir well. Allow it to simmer for 5 more minutes until slightly thickened.
- In a non-stick pan, heat ghee and add the kneaded chhena, stirring continuously on low flame until it turns light golden and starts to leave the sides of the pan.
- Pour the hot sugar syrup over the chhena mixture, mixing well to coat it evenly.
- Cook for an additional 2-3 minutes until the mixture thickens slightly.
- Transfer the mixture to a greased plate, flatten it with a spatula, and sprinkle chopped nuts on top.
- Let it cool for 10 minutes, then cut into squares or diamonds and serve warm or chilled.
