Ingredients

  • Chhena - 200 grams
  • Sugar - 100 grams
  • Water - 1 cup
  • Cardamom powder - 1/2 teaspoon
  • Ghee - 2 teaspoons
  • Chopped nuts (cashews and almonds) - 2 tablespoons
  • Saffron strands - a pinch

Steps

  1. Begin by preparing the chhena: Boil milk and curdle it using lemon juice or vinegar, then strain the curds through a muslin cloth and rinse with cold water to remove acidity.
  2. Once drained, knead the chhena for about 5 minutes until smooth and soft.
  3. In a saucepan, combine sugar and water, and heat until the sugar dissolves completely to create a sugar syrup.
  4. Add cardamom powder and saffron strands to the syrup and stir well. Allow it to simmer for 5 more minutes until slightly thickened.
  5. In a non-stick pan, heat ghee and add the kneaded chhena, stirring continuously on low flame until it turns light golden and starts to leave the sides of the pan.
  6. Pour the hot sugar syrup over the chhena mixture, mixing well to coat it evenly.
  7. Cook for an additional 2-3 minutes until the mixture thickens slightly.
  8. Transfer the mixture to a greased plate, flatten it with a spatula, and sprinkle chopped nuts on top.
  9. Let it cool for 10 minutes, then cut into squares or diamonds and serve warm or chilled.
