- Prawns - 300 grams, cleaned and deveined

- Tomato - 1 medium, finely chopped
- Coconut oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Curry leaves - 10 leaves
- Ginger-garlic paste - 1 tablespoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Coconut milk - 100 ml
- Fresh coriander leaves - for garnish
Steps
- Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add curry leaves and chopped onions. Sauté until the onions are translucent.
- Stir in ginger-garlic paste and sauté for 1-2 minutes until the raw smell disappears.
- Add chopped tomatoes and cook until they soften and turn mushy.
- Add red chili powder, turmeric powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
- Add the prawns to the pan and sauté for 5 minutes until they turn pink.
- Pour in the coconut milk, mix well, and let the mixture simmer for another 5-7 minutes until the prawns are cooked through and the flavors meld.
- Sprinkle garam masala and mix. Cook for an additional minute.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
