- Chicken (cut into pieces) - 500 grams
- Onion (finely chopped) - 1 medium (150 grams)
- Tomato (chopped) - 1 medium (100 grams)
- Ginger-garlic paste - 1 tablespoon
- Coconut (grated) - 2 tablespoons
- Oil (preferably coconut or vegetable) - 2 tablespoons
- Curry leaves - 8-10 leaves
- Red chili powder - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 tablespoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Water - 200 ml
- Fresh coriander leaves (for garnish) - a handful
Steps
- Heat the oil in a large pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and sauté for another 2 minutes until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
- In a small bowl, mix together the red chili powder, turmeric powder, coriander powder, and salt with a little water to form a paste.
- Add this spice paste to the pan and cook for 3-4 minutes until the oil starts to separate.
- Add the chicken pieces to the pan and mix well to coat them with the spices. Cook for about 5-7 minutes, stirring occasionally.
- Add the grated coconut and curry leaves, then pour in the water. Stir well and bring to a boil.
- Reduce the heat to low, cover, and let it simmer for 20 minutes or until the chicken is cooked through and tender.
- Sprinkle garam masala over the chicken and cook for an additional 5 minutes.
- Garnish with fresh coriander leaves before serving.
