Ingredients

  • Chicken (cut into pieces) - 500 grams
  • Onion (finely chopped) - 1 medium (150 grams)
  • Tomato (chopped) - 1 medium (100 grams)
  • Ginger-garlic paste - 1 tablespoon
  • Coconut (grated) - 2 tablespoons
  • Oil (preferably coconut or vegetable) - 2 tablespoons
  • Curry leaves - 8-10 leaves
  • Red chili powder - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 tablespoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Water - 200 ml
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Heat the oil in a large pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
  2. Stir in the ginger-garlic paste and sauté for another 2 minutes until the raw smell disappears.
  3. Add the chopped tomatoes and cook until they become soft and mushy.
  4. In a small bowl, mix together the red chili powder, turmeric powder, coriander powder, and salt with a little water to form a paste.
  5. Add this spice paste to the pan and cook for 3-4 minutes until the oil starts to separate.
  6. Add the chicken pieces to the pan and mix well to coat them with the spices. Cook for about 5-7 minutes, stirring occasionally.
  7. Add the grated coconut and curry leaves, then pour in the water. Stir well and bring to a boil.
  8. Reduce the heat to low, cover, and let it simmer for 20 minutes or until the chicken is cooked through and tender.
  9. Sprinkle garam masala over the chicken and cook for an additional 5 minutes.
  10. Garnish with fresh coriander leaves before serving.
