- Spinach - 2 cups, fresh
- Cherry tomatoes - 1/2 cup, halved
- Mushrooms - 1/2 cup, sliced
- Red onion - 1/4 cup, diced
- Fresh basil - 1/4 cup, chopped

Steps
- In a mixing bowl, combine the acorn flour, sea salt, and water to form a dough. Knead for a few minutes until smooth.
- Divide the dough into two equal pieces and roll each piece into a thin sheet using a rolling pin or pasta machine.
- Cut the rolled dough into your desired pasta shape (fettuccine, tagliatelle, etc.) and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red onion, sliced mushrooms, and cook for 3-4 minutes until the vegetables begin to soften.
- Stir in the halved cherry tomatoes and spinach, cooking until the spinach wilts, about 2-3 minutes.
- Meanwhile, bring a pot of salted water to a boil. Add the acorn pasta and cook for 3-5 minutes until al dente, then drain.
- Toss the cooked pasta with the sautéed vegetable mixture and fresh basil. Season with black pepper to taste.
- Serve warm, garnished with additional fresh basil if desired.
