- Tomato - 1/4 cup, finely chopped
- Bell pepper - 1/4 cup, finely chopped
- Cheese (mozzarella or cheddar) - 1 cup, shredded
- Coconut oil or ghee - 2 tablespoons for cooking
Steps
- In a mixing bowl, combine almond flour, baking powder, salt, and black pepper.
- In another bowl, whisk the egg and Greek yogurt until smooth, then add to the dry ingredients and mix well to form a batter.
- Fold in the chopped onion, tomato, and bell pepper into the batter until evenly distributed.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of coconut oil or ghee.
- Pour half of the batter into the skillet, spreading it evenly into a round shape.
- Cook for about 3-4 minutes until the bottom is golden brown, then sprinkle half of the shredded cheese over the top.
- Cover the skillet and cook for an additional 2-3 minutes until the cheese melts and the uttapam is cooked through.
- Remove from the skillet and repeat the process with the remaining batter and cheese to make the second uttapam.
