Ingredients

  • Basmati rice - 50 grams
  • Almond milk - 400 ml
  • Coconut sugar - 2 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Chopped almonds - 2 tablespoons
  • Chopped cashews - 2 tablespoons
  • Raisins - 1 tablespoon
  • Saffron strands - a pinch
  • Water - 200 ml

Steps

  1. Rinse the basmati rice under running water until the water runs clear, then soak it in water for 15 minutes.
  2. In a saucepan, combine the soaked rice and 200 ml of water. Bring it to a boil over medium heat and cook until the rice is soft and water is absorbed, about 10 minutes.
  3. Add the almond milk to the cooked rice and stir well. Lower the heat and simmer for 10 minutes, stirring occasionally to prevent sticking.
  4. Stir in the coconut sugar, cardamom powder, saffron strands, and half of the chopped nuts and raisins. Cook for an additional 5 minutes until the kheer thickens to your desired consistency.
  5. Remove from heat and let it cool slightly. Garnish with the remaining nuts and raisins before serving.
