- Basmati rice - 50 grams
- Almond milk - 400 ml
- Coconut sugar - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Chopped almonds - 2 tablespoons
- Chopped cashews - 2 tablespoons
- Raisins - 1 tablespoon
- Saffron strands - a pinch
- Water - 200 ml
Steps
- Rinse the basmati rice under running water until the water runs clear, then soak it in water for 15 minutes.
- In a saucepan, combine the soaked rice and 200 ml of water. Bring it to a boil over medium heat and cook until the rice is soft and water is absorbed, about 10 minutes.
- Add the almond milk to the cooked rice and stir well. Lower the heat and simmer for 10 minutes, stirring occasionally to prevent sticking.
- Stir in the coconut sugar, cardamom powder, saffron strands, and half of the chopped nuts and raisins. Cook for an additional 5 minutes until the kheer thickens to your desired consistency.
- Remove from heat and let it cool slightly. Garnish with the remaining nuts and raisins before serving.
