Ingredients

  • Basmati rice - 1/2 cup (100g)
  • Sugar - 1/2 cup (100g)
  • Milk - 1 cup (240ml)
  • Ghee (clarified butter) - 2 tablespoons (30g)
  • Ground cardamom - 1/2 teaspoon
  • Chopped almonds - 2 tablespoons (15g)
  • Chopped pistachios - 2 tablespoons (15g)
  • Saffron strands - a pinch
  • Water - 2 cups (480ml)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Drain the soaked rice and blend it into a coarse paste using a little water if necessary.
  3. In a heavy-bottomed pan, heat ghee over medium heat and add the rice paste, stirring continuously for about 5 minutes until it thickens.
  4. Add the milk, sugar, and saffron strands to the pan, stirring well to combine, and cook for another 10-12 minutes until the mixture thickens and starts to leave the sides of the pan.
  5. Stir in the ground cardamom, chopped almonds, and chopped pistachios, mixing well.
  6. Grease a flat dish or tray with a little ghee and pour the cooked mixture into it, spreading it evenly with a spatula.
  7. Allow the mixture to cool at room temperature for about 30 minutes, then cut it into square or diamond-shaped pieces.
  8. Serve the Chawal Ki Barfi at room temperature or chilled.
