- Basmati rice - 1/2 cup (100g)
- Sugar - 1/2 cup (100g)
- Milk - 1 cup (240ml)
- Ghee (clarified butter) - 2 tablespoons (30g)
- Ground cardamom - 1/2 teaspoon
- Chopped almonds - 2 tablespoons (15g)
- Chopped pistachios - 2 tablespoons (15g)
- Saffron strands - a pinch
- Water - 2 cups (480ml)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- Drain the soaked rice and blend it into a coarse paste using a little water if necessary.
- In a heavy-bottomed pan, heat ghee over medium heat and add the rice paste, stirring continuously for about 5 minutes until it thickens.
- Add the milk, sugar, and saffron strands to the pan, stirring well to combine, and cook for another 10-12 minutes until the mixture thickens and starts to leave the sides of the pan.
- Stir in the ground cardamom, chopped almonds, and chopped pistachios, mixing well.
- Grease a flat dish or tray with a little ghee and pour the cooked mixture into it, spreading it evenly with a spatula.
- Allow the mixture to cool at room temperature for about 30 minutes, then cut it into square or diamond-shaped pieces.
- Serve the Chawal Ki Barfi at room temperature or chilled.
