Ingredients

  • Acorn Squash - 1 medium (about 500g)
  • Olive Oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Smoked Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Fresh Cilantro - 2 tablespoons, chopped (for garnish)
  • Lime - 1, cut into wedges (for serving)

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. Cut the acorn squash in half lengthwise and scoop out the seeds.
  3. In a small bowl, mix together the olive oil, cumin, coriander, turmeric, smoked paprika, salt, and black pepper to create a marinade.
  4. Brush the inside of the acorn squash halves with the marinade generously.
  5. Place the acorn squash cut-side down on the grill and cook for about 20 minutes, until it begins to char and soften.
  6. Flip the squash over and grill for an additional 10 minutes, or until tender and charred to your liking.
  7. Remove from the grill, garnish with chopped cilantro, and serve with lime wedges.
