- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Smoked Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Fresh Cilantro - 2 tablespoons, chopped (for garnish)
- Lime - 1, cut into wedges (for serving)
Steps
- Preheat your grill or BBQ to medium-high heat.
- Cut the acorn squash in half lengthwise and scoop out the seeds.
- In a small bowl, mix together the olive oil, cumin, coriander, turmeric, smoked paprika, salt, and black pepper to create a marinade.
- Brush the inside of the acorn squash halves with the marinade generously.
- Place the acorn squash cut-side down on the grill and cook for about 20 minutes, until it begins to char and soften.
- Flip the squash over and grill for an additional 10 minutes, or until tender and charred to your liking.
- Remove from the grill, garnish with chopped cilantro, and serve with lime wedges.
