- Almond flour - 1 cup
- Coconut flour - 2 tablespoons
- Egg - 1 large
- Olive oil - 2 tablespoons
- Water - 2-3 tablespoons
- Chanterelle mushrooms - 200 grams, cleaned and sliced
- Ghee - 1 tablespoon
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Fresh cilantro - for garnish
- Chili flakes - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, coconut flour, salt, egg, olive oil, and water until a dough forms. Adjust water as needed to get a workable consistency.
- Roll the dough out between two pieces of parchment paper into a flatbread shape about 1/4 inch thick.
- Transfer the flatbread to a baking sheet lined with parchment paper and bake for 10-12 minutes until golden.
- While the flatbread is baking, heat ghee in a skillet over medium heat. Add minced garlic and sauté for 1 minute.
- Add the sliced chanterelle mushrooms, cumin powder, turmeric powder, and salt. Sauté for 5-7 minutes until the mushrooms are tender and golden.
- Remove the flatbread from the oven and top with the sautéed chanterelle mixture.
- Return the flatbread to the oven and bake for an additional 5 minutes.
- Remove from the oven, garnish with fresh cilantro and chili flakes, and slice into pieces to serve.
