Ingredients

  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Water - 2-3 tablespoons
  • Chanterelle mushrooms - 200 grams, cleaned and sliced
  • Ghee - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh cilantro - for garnish
  • Chili flakes - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, coconut flour, salt, egg, olive oil, and water until a dough forms. Adjust water as needed to get a workable consistency.
  3. Roll the dough out between two pieces of parchment paper into a flatbread shape about 1/4 inch thick.
  4. Transfer the flatbread to a baking sheet lined with parchment paper and bake for 10-12 minutes until golden.
  5. While the flatbread is baking, heat ghee in a skillet over medium heat. Add minced garlic and sauté for 1 minute.
  6. Add the sliced chanterelle mushrooms, cumin powder, turmeric powder, and salt. Sauté for 5-7 minutes until the mushrooms are tender and golden.
  7. Remove the flatbread from the oven and top with the sautéed chanterelle mixture.
  8. Return the flatbread to the oven and bake for an additional 5 minutes.
  9. Remove from the oven, garnish with fresh cilantro and chili flakes, and slice into pieces to serve.
