- Cooked chickpeas - 1 cup (240g)
- Cucumber - 1 small, diced
- Tomato - 1 medium, diced
- Red onion - 1/4 medium, finely chopped
- Carrot - 1 small, grated
- Coriander leaves - 2 tablespoons, chopped
- Green chili - 1 small, finely chopped
- Lemon juice - 1 tablespoon
- Coconut (fresh or desiccated) - 2 tablespoons
- Mustard seeds - 1/2 teaspoon
- Oil (coconut or olive) - 1 teaspoon
- Salt - to taste
Steps
- In a small pan, heat 1 teaspoon of oil over medium heat.
- Add 1/2 teaspoon of mustard seeds and let them splutter.
- Once the mustard seeds are spluttering, remove the pan from heat and let it cool slightly.
- In a mixing bowl, combine the cooked chickpeas, diced cucumber, diced tomato, finely chopped red onion, grated carrot, chopped coriander leaves, and finely chopped green chili.
- Pour the tempered mustard seeds and oil over the salad mixture.
- Add lemon juice and salt to taste, then mix everything gently until well combined.
- Sprinkle fresh or desiccated coconut over the top, mix lightly, and serve immediately.
