Ingredients

  • Cooked chickpeas - 1 cup (240g)
  • Cucumber - 1 small, diced
  • Tomato - 1 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Carrot - 1 small, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Green chili - 1 small, finely chopped
  • Lemon juice - 1 tablespoon
  • Coconut (fresh or desiccated) - 2 tablespoons
  • Mustard seeds - 1/2 teaspoon
  • Oil (coconut or olive) - 1 teaspoon
  • Salt - to taste

Steps

  1. In a small pan, heat 1 teaspoon of oil over medium heat.
  2. Add 1/2 teaspoon of mustard seeds and let them splutter.
  3. Once the mustard seeds are spluttering, remove the pan from heat and let it cool slightly.
  4. In a mixing bowl, combine the cooked chickpeas, diced cucumber, diced tomato, finely chopped red onion, grated carrot, chopped coriander leaves, and finely chopped green chili.
  5. Pour the tempered mustard seeds and oil over the salad mixture.
  6. Add lemon juice and salt to taste, then mix everything gently until well combined.
  7. Sprinkle fresh or desiccated coconut over the top, mix lightly, and serve immediately.
