  • Garlic - 3 cloves, minced
  • Ginger - 1-inch piece, grated
  • Green chili - 1, slit (optional)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil (coconut or vegetable) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Heat the oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onions and sauté until they become translucent.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for 1-2 minutes until fragrant.
  4. Add the chopped tomato and cook until softened, about 3-4 minutes.
  5. Sprinkle in the turmeric and coriander powders, mixing well to combine.
  6. Add the cooked chickpeas and salt, stirring to coat them with the spices. Cook for 5 minutes.
  7. Add the fresh spinach and cook until wilted, about 3-5 minutes, mixing occasionally.
  8. Stir in the garam masala and lemon juice, adjusting salt to taste.
  9. Remove from heat and garnish with fresh cilantro before serving.
