Ingredients

  • Canned chickpeas - 240 grams (1 cup)
  • Coconut milk - 200 ml (3/4 cup)
  • Jaggery (grated) - 50 grams (1/4 cup)
  • Cardamom powder - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Chopped nuts (almonds, pistachios) - 30 grams (1/4 cup)
  • Salt - a pinch

Steps

  1. Rinse and drain the canned chickpeas thoroughly and set aside.
  2. In a blender, combine the chickpeas, coconut milk, jaggery, cardamom powder, and vanilla extract. Blend until smooth.
  3. In a saucepan, mix the cornstarch with a little water to form a slurry, then add it to the blended mixture.
  4. Pour the mixture into the saucepan and cook on medium heat, continuously stirring, until it thickens (about 5-7 minutes).
  5. Once thickened, remove from heat and pour into serving bowls.
  6. Allow the pudding to cool to room temperature, then refrigerate for at least 1 hour.
  7. Before serving, sprinkle chopped nuts on top and enjoy your high-protein chana pudding.
