- Canned chickpeas - 240 grams (1 cup)
- Coconut milk - 200 ml (3/4 cup)
- Jaggery (grated) - 50 grams (1/4 cup)
- Cardamom powder - 1/2 teaspoon
- Vanilla extract - 1 teaspoon
- Cornstarch - 2 tablespoons
- Chopped nuts (almonds, pistachios) - 30 grams (1/4 cup)
- Salt - a pinch
Steps
- Rinse and drain the canned chickpeas thoroughly and set aside.
- In a blender, combine the chickpeas, coconut milk, jaggery, cardamom powder, and vanilla extract. Blend until smooth.
- In a saucepan, mix the cornstarch with a little water to form a slurry, then add it to the blended mixture.
- Pour the mixture into the saucepan and cook on medium heat, continuously stirring, until it thickens (about 5-7 minutes).
- Once thickened, remove from heat and pour into serving bowls.
- Allow the pudding to cool to room temperature, then refrigerate for at least 1 hour.
- Before serving, sprinkle chopped nuts on top and enjoy your high-protein chana pudding.
