Chana Masala Puri

Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish
  • Water - 500 ml
  • Rice flour - 100 grams
  • Potato - 1 medium, boiled and mashed
  • Black sesame seeds - 1 tablespoon
  • Oil - for frying

Steps

  1. Drain and rinse the soaked chickpeas. In a pressure cooker, add the chickpeas, 500 ml of water, and a pinch of salt. Cook for 15-20 minutes until soft. If using a pot, boil for about 45-60 minutes.
  2. In a pan, heat 2 tablespoons of oil. Add cumin seeds and let them splutter. Then add chopped onions and sauté until golden brown.
  3. Add minced garlic, grated ginger, and slit green chili. Sauté for 2 minutes until fragrant.
  4. Add chopped tomatoes, turmeric, coriander powder, cumin powder, and salt. Cook until the tomatoes soften, about 5 minutes.
  5. Add the cooked chickpeas along with some of the cooking water to achieve desired consistency. Stir in garam masala and simmer for another 5 minutes. Garnish with fresh coriander leaves.
  6. In a mixing bowl, combine rice flour, boiled mashed potato, black sesame seeds, and a pinch of salt. Add water gradually to form a soft dough.
  7. Divide the dough into small balls, roll them into puris about 1/4 inch thick.
  8. Heat oil in a frying pan over medium heat. Fry the puris until they puff up and turn golden brown on both sides. Remove and drain on paper towels.
  9. Serve the hot chana masala with crispy puris.
