Chana Masala Puri

Ingredients
- Chickpeas - 200 grams (soaked overnight)
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
- Water - 500 ml
- Rice flour - 100 grams
- Potato - 1 medium, boiled and mashed
- Black sesame seeds - 1 tablespoon
- Oil - for frying
Steps
- Drain and rinse the soaked chickpeas. In a pressure cooker, add the chickpeas, 500 ml of water, and a pinch of salt. Cook for 15-20 minutes until soft. If using a pot, boil for about 45-60 minutes.
- In a pan, heat 2 tablespoons of oil. Add cumin seeds and let them splutter. Then add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and slit green chili. Sauté for 2 minutes until fragrant.
- Add chopped tomatoes, turmeric, coriander powder, cumin powder, and salt. Cook until the tomatoes soften, about 5 minutes.
- Add the cooked chickpeas along with some of the cooking water to achieve desired consistency. Stir in garam masala and simmer for another 5 minutes. Garnish with fresh coriander leaves.
- In a mixing bowl, combine rice flour, boiled mashed potato, black sesame seeds, and a pinch of salt. Add water gradually to form a soft dough.
- Divide the dough into small balls, roll them into puris about 1/4 inch thick.
- Heat oil in a frying pan over medium heat. Fry the puris until they puff up and turn golden brown on both sides. Remove and drain on paper towels.
- Serve the hot chana masala with crispy puris.
