  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Cilantro (chopped) - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Dairy-free pie crust - 1 (store-bought or homemade)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat the olive oil over medium heat and add cumin seeds, allowing them to sizzle for a few seconds.
  3. Add the chopped onion and sauté until golden brown.
  4. Stir in the garlic, ginger, and green chili, cooking for another minute until fragrant.
  5. Add the diced tomato, cooking until it breaks down, about 5 minutes.
  6. Mix in the cooked chickpeas, coriander powder, garam masala, turmeric powder, and salt. Cook for 5-7 minutes, stirring occasionally.
  7. Remove from heat and stir in the chopped cilantro and lemon juice. Allow the filling to cool slightly.
  8. Roll out the dairy-free pie crust and place it into a pie dish, pressing down gently.
  9. Fill the crust with the chana masala mixture, spreading it evenly.
  10. Cover with an additional layer of pie crust, sealing the edges and making small slits on top for steam to escape.
  11. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  12. Allow to cool for a few minutes before slicing and serving.
