Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat the olive oil over medium heat and add cumin seeds, allowing them to sizzle for a few seconds.
- Add the chopped onion and sauté until golden brown.
- Stir in the garlic, ginger, and green chili, cooking for another minute until fragrant.
- Add the diced tomato, cooking until it breaks down, about 5 minutes.
- Mix in the cooked chickpeas, coriander powder, garam masala, turmeric powder, and salt. Cook for 5-7 minutes, stirring occasionally.
- Remove from heat and stir in the chopped cilantro and lemon juice. Allow the filling to cool slightly.
- Roll out the dairy-free pie crust and place it into a pie dish, pressing down gently.
- Fill the crust with the chana masala mixture, spreading it evenly.
- Cover with an additional layer of pie crust, sealing the edges and making small slits on top for steam to escape.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- Allow to cool for a few minutes before slicing and serving.
