Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Onion - 1 medium, finely chopped
  • Tomato - 1 large, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, finely chopped
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Olive oil - 2 tablespoons
  • Fresh cilantro - a handful, chopped
  • Bread crumbs - 1/2 cup
  • Grated cheese (optional) - 1/4 cup

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add chopped onion, and sauté until translucent, about 5 minutes.
  4. Stir in minced garlic, grated ginger, and green chili; cook for another minute.
  5. Add diced tomato, coriander powder, garam masala, turmeric powder, and salt. Cook until the tomatoes are soft, about 5-7 minutes.
  6. Add the drained chickpeas to the skillet, mixing well to coat them with the spices. Cook for another 5 minutes, allowing the flavors to meld.
  7. Remove from heat and stir in chopped cilantro.
  8. Transfer the chickpea mixture to a baking dish, spreading it out evenly.
  9. In a bowl, combine bread crumbs and grated cheese (if using). Sprinkle this mixture over the chickpeas.
  10. Bake in the preheated oven for 20 minutes, or until the top is golden and crispy.
  11. Remove from the oven and let it cool slightly before serving.
