- Canned chickpeas - 400 grams, drained and rinsed

- Tomato - 1 large, diced
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, finely chopped
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Olive oil - 2 tablespoons
- Fresh cilantro - a handful, chopped
- Bread crumbs - 1/2 cup
- Grated cheese (optional) - 1/4 cup
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onion, and sauté until translucent, about 5 minutes.
- Stir in minced garlic, grated ginger, and green chili; cook for another minute.
- Add diced tomato, coriander powder, garam masala, turmeric powder, and salt. Cook until the tomatoes are soft, about 5-7 minutes.
- Add the drained chickpeas to the skillet, mixing well to coat them with the spices. Cook for another 5 minutes, allowing the flavors to meld.
- Remove from heat and stir in chopped cilantro.
- Transfer the chickpea mixture to a baking dish, spreading it out evenly.
- In a bowl, combine bread crumbs and grated cheese (if using). Sprinkle this mixture over the chickpeas.
- Bake in the preheated oven for 20 minutes, or until the top is golden and crispy.
- Remove from the oven and let it cool slightly before serving.
