- Chana dal (split chickpeas) - 100 grams
- Coconut milk - 200 ml
- Maple syrup - 3 tablespoons
- Cardamom powder - 1/2 teaspoon
- Cinnamon powder - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Almonds (chopped) - 2 tablespoons
- Raisins - 2 tablespoons
- Coconut flakes (unsweetened) - 2 tablespoons
Steps
- Rinse the chana dal under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked chana dal and transfer it to a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until soft.
- Once cooked, drain any excess water and mash the dal lightly with a fork or potato masher.
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the mashed chana dal, coconut milk, maple syrup, cardamom powder, cinnamon powder, vanilla extract, and salt. Mix well until all ingredients are combined.
- Fold in the chopped almonds and raisins, reserving some for topping.
- Transfer the mixture to a greased baking dish and smooth the top with a spatula.
- Sprinkle the reserved almonds, raisins, and coconut flakes on top.
- Bake in the preheated oven for 25-30 minutes or until the edges are slightly golden and the center is set.
- Allow to cool for a few minutes before slicing and serving warm or at room temperature.
