- Oil - 1 tablespoon (for cooking)
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Red onion - 1 small, finely chopped
- Fresh coriander leaves - a handful, chopped
- Green chili - 1, finely chopped (optional)
- Chaat masala - 1 teaspoon
- Mint chutney - 2 tablespoons
- Tamarind chutney - 2 tablespoons
- Pomegranate seeds - 2 tablespoons (for garnish)
Steps
- In a bowl, mix chickpea flour, water, turmeric powder, cumin powder, black salt, and baking powder to make a smooth batter.
- Heat a non-stick skillet with 1 tablespoon of oil over medium heat. Pour half of the batter into the skillet and spread it to form a pancake.
- Cook for about 3-4 minutes on each side until golden brown. Repeat with the remaining batter to make a second pancake.
- Place the cooked chickpea pancakes on a pizza base.
- Spread the diced tomatoes, cucumber, red onion, and green chili evenly over the pancakes.
- Drizzle mint chutney and tamarind chutney generously over the toppings.
- Sprinkle chaat masala and fresh coriander leaves on top.
- Garnish with pomegranate seeds and serve immediately.
