  • Chickpea flour (besan) - 100 grams
  • Water - 150 ml
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Black salt - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Oil - 1 tablespoon (for cooking)
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red onion - 1 small, finely chopped
  • Fresh coriander leaves - a handful, chopped
  • Green chili - 1, finely chopped (optional)
  • Chaat masala - 1 teaspoon
  • Mint chutney - 2 tablespoons
  • Tamarind chutney - 2 tablespoons
  • Pomegranate seeds - 2 tablespoons (for garnish)

Steps

  1. In a bowl, mix chickpea flour, water, turmeric powder, cumin powder, black salt, and baking powder to make a smooth batter.
  2. Heat a non-stick skillet with 1 tablespoon of oil over medium heat. Pour half of the batter into the skillet and spread it to form a pancake.
  3. Cook for about 3-4 minutes on each side until golden brown. Repeat with the remaining batter to make a second pancake.
  4. Place the cooked chickpea pancakes on a pizza base.
  5. Spread the diced tomatoes, cucumber, red onion, and green chili evenly over the pancakes.
  6. Drizzle mint chutney and tamarind chutney generously over the toppings.
  7. Sprinkle chaat masala and fresh coriander leaves on top.
  8. Garnish with pomegranate seeds and serve immediately.
