Ingredients

  • All-purpose flour - 100 grams
  • Semolina - 50 grams
  • Carom seeds - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - as needed
  • Oil - for frying
  • Chickpeas - 100 grams (cooked)
  • Potato - 1 medium (boiled and diced)
  • Onion - 1 small (finely chopped)
  • Tomato - 1 small (finely chopped)
  • Cucumber - 1 small (finely chopped)
  • Coriander leaves - a handful (chopped)
  • Tamarind chutney - 4 tablespoons
  • Mint chutney - 2 tablespoons
  • Chaat masala - 1 teaspoon
  • Red chili powder - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, mix all-purpose flour, semolina, carom seeds, and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 15 minutes.
  2. Divide the dough into small balls and roll each ball into thin circles. Heat oil in a pan and fry each circle until golden brown and crispy. Drain on paper towels.
  3. In a serving plate, arrange the fried papris. Top with cooked chickpeas, diced boiled potatoes, chopped onions, tomatoes, and cucumber.
  4. Drizzle tamarind chutney and mint chutney over the top. Sprinkle chaat masala, red chili powder, and lemon juice to taste.
  5. Garnish with chopped coriander leaves and serve immediately.
