- Semolina - 50 grams
- Carom seeds - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Water - as needed
- Oil - for frying
- Chickpeas - 100 grams (cooked)
- Potato - 1 medium (boiled and diced)
- Onion - 1 small (finely chopped)
- Tomato - 1 small (finely chopped)
- Cucumber - 1 small (finely chopped)
- Coriander leaves - a handful (chopped)
- Tamarind chutney - 4 tablespoons
- Mint chutney - 2 tablespoons
- Chaat masala - 1 teaspoon
- Red chili powder - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a bowl, mix all-purpose flour, semolina, carom seeds, and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 15 minutes.
- Divide the dough into small balls and roll each ball into thin circles. Heat oil in a pan and fry each circle until golden brown and crispy. Drain on paper towels.
- In a serving plate, arrange the fried papris. Top with cooked chickpeas, diced boiled potatoes, chopped onions, tomatoes, and cucumber.
- Drizzle tamarind chutney and mint chutney over the top. Sprinkle chaat masala, red chili powder, and lemon juice to taste.
- Garnish with chopped coriander leaves and serve immediately.
