Ingredients

  • All-purpose flour - 100 grams
  • Semolina - 50 grams
  • Carom seeds - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - as needed
  • Oil - for frying
  • Boiled potatoes - 100 grams, diced
  • Chickpeas - 50 grams, boiled
  • Yogurt - 100 grams
  • Tamarind chutney - 2 tablespoons
  • Mint chutney - 2 tablespoons
  • Chaat masala - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coriander leaves - 2 tablespoons, chopped
  • Sev (crunchy noodle snack) - 30 grams
  • Pomegranate seeds - 2 tablespoons

Steps

  1. In a bowl, mix the all-purpose flour, semolina, carom seeds, and salt. Gradually add water to form a smooth dough. Cover and let it rest for 15 minutes.
  2. Divide the dough into small balls and roll each ball into a thin circle. Heat oil in a pan and fry the circles until golden and crispy. Drain on paper towels.
  3. In a serving plate, arrange the fried papdis. Top each papdi with diced boiled potatoes and boiled chickpeas.
  4. Drizzle yogurt, tamarind chutney, and mint chutney over the toppings.
  5. Sprinkle chaat masala, red chili powder, and chopped coriander leaves on top.
  6. Finally, garnish with sev and pomegranate seeds for crunch and color. Serve immediately.
