Ingredients

  • Whole wheat pizza base - 1 (approximately 200g)
  • Cooked chickpeas - 100g
  • Paneer (Indian cottage cheese) - 100g, cubed
  • Mozzarella cheese - 100g, shredded
  • Onion - 1 small, finely chopped
  • Tomato - 1 small, finely chopped
  • Cucumber - 1 small, finely chopped
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Chaat masala - 1 teaspoon
  • Tandoori masala - 1 teaspoon
  • Green chili - 1, finely chopped (optional)
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine the cooked chickpeas, cubed paneer, chopped onion, tomato, cucumber, fresh coriander, chaat masala, tandoori masala, green chili (if using), olive oil, and salt. Mix well.
  3. Spread the chickpea and paneer mixture evenly over the whole wheat pizza base.
  4. Sprinkle shredded mozzarella cheese generously on top of the mixture.
  5. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly and the edges of the pizza are golden brown.
  6. Remove from the oven and drizzle lemon juice over the pizza.
  7. Cut into slices and serve hot, garnished with extra coriander if desired.
