- Whole wheat pizza base - 1 (approximately 200g)
- Cooked chickpeas - 100g
- Paneer (Indian cottage cheese) - 100g, cubed
- Mozzarella cheese - 100g, shredded
- Onion - 1 small, finely chopped
- Tomato - 1 small, finely chopped
- Cucumber - 1 small, finely chopped
- Fresh coriander leaves - 2 tablespoons, chopped
- Chaat masala - 1 teaspoon
- Tandoori masala - 1 teaspoon
- Green chili - 1, finely chopped (optional)
- Olive oil - 1 tablespoon
- Salt - to taste
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 220°C (425°F).
- In a mixing bowl, combine the cooked chickpeas, cubed paneer, chopped onion, tomato, cucumber, fresh coriander, chaat masala, tandoori masala, green chili (if using), olive oil, and salt. Mix well.
- Spread the chickpea and paneer mixture evenly over the whole wheat pizza base.
- Sprinkle shredded mozzarella cheese generously on top of the mixture.
- Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly and the edges of the pizza are golden brown.
- Remove from the oven and drizzle lemon juice over the pizza.
- Cut into slices and serve hot, garnished with extra coriander if desired.
