Ingredients

  • Trout fillets - 2 x 200g
  • Cedar plank - 1 (pre-soaked in water for at least 1 hour)
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh dill - 2 tablespoons, chopped
  • Cherry tomatoes - 100g, halved
  • Red onion - 50g, thinly sliced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your grill to medium heat (about 180°C).
  2. Soak the cedar plank in water for at least 1 hour to prevent burning.
  3. In a small bowl, mix olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper.
  4. Place the soaked cedar plank on the grill and heat for about 5 minutes until it starts to crackle.
  5. Lay the trout fillets skin side down on the cedar plank.
  6. Brush the trout with the olive oil mixture and top with halved cherry tomatoes and red onion slices.
  7. Close the grill lid and cook for about 15-20 minutes, or until the trout flakes easily with a fork.
  8. Carefully remove the cedar plank from the grill and let it cool for a few minutes before serving.
