- Salmon fillet - 200 grams
- Cedar plank (soaked in water for 1 hour) - 1 piece
- Coconut cream - 100 ml
- Pitted dates - 50 grams
- Almond flour - 2 tablespoons
- Cinnamon powder - 1/2 teaspoon
- Vanilla extract - 1/2 teaspoon
- Sea salt - 1/4 teaspoon
- Chopped walnuts - 2 tablespoons
Steps
- Preheat your oven to 200°C (400°F).
- Soak the cedar plank in water for at least 1 hour to prevent it from burning during cooking.
- In a small saucepan, combine coconut cream, pitted dates, cinnamon, and vanilla extract. Cook over low heat until the dates are soft and the mixture is well combined, about 5-7 minutes.
- Once the dates are softened, blend the mixture until smooth using a blender or an immersion blender. Set aside.
- Remove the cedar plank from the water and pat it dry. Place the salmon fillet on the cedar plank and sprinkle with sea salt and almond flour.
- Place the cedar plank with the salmon in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon is baking, toast the chopped walnuts in a dry skillet over medium heat until golden brown, about 3-4 minutes.
- Once the salmon is done, remove it from the oven and drizzle the warm coconut-date sauce over the top. Sprinkle with toasted walnuts before serving.
