Ingredients

  • Salmon fillet - 200 grams
  • Cedar plank (soaked in water for 1 hour) - 1 piece
  • Coconut cream - 100 ml
  • Pitted dates - 50 grams
  • Almond flour - 2 tablespoons
  • Cinnamon powder - 1/2 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Sea salt - 1/4 teaspoon
  • Chopped walnuts - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Soak the cedar plank in water for at least 1 hour to prevent it from burning during cooking.
  3. In a small saucepan, combine coconut cream, pitted dates, cinnamon, and vanilla extract. Cook over low heat until the dates are soft and the mixture is well combined, about 5-7 minutes.
  4. Once the dates are softened, blend the mixture until smooth using a blender or an immersion blender. Set aside.
  5. Remove the cedar plank from the water and pat it dry. Place the salmon fillet on the cedar plank and sprinkle with sea salt and almond flour.
  6. Place the cedar plank with the salmon in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. While the salmon is baking, toast the chopped walnuts in a dry skillet over medium heat until golden brown, about 3-4 minutes.
  8. Once the salmon is done, remove it from the oven and drizzle the warm coconut-date sauce over the top. Sprinkle with toasted walnuts before serving.
